During this evening, families gather together to celebrate and share traditional holiday dishes such as turkey, and regional dishes including bacalao a la vizcaina (Biscayan dried cod), and romeritos, wild greens in mole sauce. For the holiday toast, the typical drink is ponche con piquete - similar to hot apple cider, made of seasonal fruits, cinnamon sticks, and spiked with brandy or rum. One of these traditions, Las Posadas, takes place throughout the country on nine consecutive evenings, from Dec. 16 to 24. The posada is the reenactment of the journey Mary and Joseph took to Bethlehem for Christs birth.
